0% of the tourists along the Bulgarian Black Sea coast prefer seafood, Yonko Dyakov, member of the Managing Board of the Bulgarian Chefs’ Association, said. Many restaurants buy fish directly from local fishermen so that they could be certain the fish is fresh. Some restaurants even have window displays of living fish to assure their clients the food is cooked with fresh fish. Tourists have a wide range of choice. Dyakov’s restaurant in the city of Varna relies on untraditional and author’s seafood meals, such as a dessert prepared with chocolate and turbot. The restaurant counts also on Bulgarian tradition presented in an innovative way. For example, turbot is served with truffle peel, lemon jam and vegetable mousse.
